After being crushed, the grapes were cooled down and trodden by foot during four hours in granite lagares and then transferred to small refrigerated stainless steel vinifying vats. Each grape variety is vinified separately.
Harvest Report
In 2010 we have witnessed the rainiest winter and spring for a long time. As early as May the average rainfall had been reached and, soon afterwards it it had been doubled. This has led to very high levels of water in the soils, avoiding any level of hydric stress during the agricultural year. Despite all this, there was a low incidence of diseases.
The summer was warm and dry, but the volume of existing water in the soils made it easy to go through the hotter months.
The harvest started on September 6, representing a delay of around 2 weeks from the usual starting date. Since maturation was very even and balanced, the harvest was also made at a slow pace, allowing us to pick each parcel at its perfect maturation level.
